Taste of Tulalip Oktoberfest 2017: Bavarian Journey In Washington


I’ve enjoyed the cuisine at the Tulalip Resort Casino north of Seattle, WA so have no doubt that theses special Oktoberfest offerings will be quite a draw.

Holding true to Tulalip Resort Casino fashion, the culinary team will draw from the original Munich Oktoberfest for their first annual Taste of Tulalip Oktoberfest on Friday, September 22 from 6 pm to 9 pm at The Draft Sports Bar and Grill Patio. Sommelier Tom Thompson and Executive Chef Perry Mascitti will showcase authentic German dishes along with imported, local, and domestic Oktoberfest inspired beer at the enjoyable Taste of Tulalip celebration. Tickets are priced at $45 per person, ages 21 and over.
 


The Draft’s Chef Brent Clarkson carefully prepared the menu with options including hearty platters of Uli’s Famous Brats and Sauerkraut, Beer and Cheese Soup with Bavarian Pretzel Crouton, and a traditional Spätzle Bake (German Spätzle pasta lightly buttered and layered with Black Forest ham and Emmenthaler cheese topped with caramelized onions). Rounding out the selections are a Savory Bavarian Pretzel Bread Pudding with mustard caraway rye cream, Pork Schnitzel “Pops” topped with bacon and wild mushroom cream sauce, and a Cheese and Wurst Display, featuring traditional German frankfurter and classic Weiss Wurst sausages (served with an assortment of cheeses, pickled vegetables, gherkins, and breads).

Tom Thompson’s team will serve up a grand selection of beers from noteworthy breweries featuring: Backwoods Brewing, Deschutes, Dru Bru, Georgetown Brewing, Leinenkugel's, Sam Adams, Sierra Nevada, Hofbräu, Paulaner, and the Hacker-Pschorr.

During the evening’s festivities, guests can take their chance with lady luck and enter to win from one of two raffle drawings. The two prizes will each include two tickets to the Robert Cray show on November 17, 2017, one overnight stay at Tulalip (some restrictions may apply) and a $100 dining credit applied to the winner’s room.

Doors open for the Taste of Tulalip Oktoberfest 2017 at 6 pm and tickets are priced at $45 per person all-inclusive. To purchase tickets, call (360) 716-1625. All attendees must be 21 and over.




The Resort didn’t think a one day celebration was enough for this beloved, time honored Bavarian festival, so they started the celebration early at the following eateries, which will feature German fare from September 5 through October 31, 2017:

Cedars Cafe will serve Bavarian style Wiener Schnitzel with warm sweet and sour coleslaw, mashed potatoes; topped with crispy onion straws, lemon beurre blanc, and blackberry sauce. Dessert includes Cedars’ Black Forest Ice Cream Sundae with chocolate ice cream, Kirsch cherry compote, whip cream, and chocolate shavings.

Blackfish Wild Salmon Grill presents their Seared Apple Marinated Duck Breast with apple-duck demi & Thuringer sausage with apple-mustard demi, along with onion potatoes, green beans, red cabbage and bacon and a dessert featuring Apple-Raisin Strudel with vanilla bean ice cream.

Carvery/Hotel Espresso makes their mark with Bavarian Ham Sandwich Black Forest ham on a fresh Bavarian pretzel roll, Munster cheese, dill pickles, and stone ground mustard.

The Draft Sports Bar will offer Pork Schnitzel Pops bite sized pork thinly pounded, skewered, breaded, fried golden brown and topped with bacon and wild mushroom cream sauce. Served with warm bacon potato salad and braised apple and red cabbage.

Tulalip Bay’s menu is embellished for the season with Spicy Sausage and Truffle Potato Fritter with stone ground mustard sauce and a dessert of Linzer Torte with beer ice cream.

Eagles Buffet will offer Amber Ale Braised Beef Brisket with buttered Spätzle in September and Bavarian Pork Ribs with braised red cabbage in October.

Tulalip Resort Casino Announces 2017 Easter Dining Options


The Tulalip Resort Casino complex, north of Seattle, includes dining options certain to please. The chef team at the Tulalip ResortCasino has hatched several egg-trodinary Easter Sunday dining options for the whole family. Guests can choose from the Resort’s signature Eagles Buffet, to dinner specials at the award-winning Blackfish Wild Salmon Grill, Tulalip Bay Restaurant, or Cedars Cafe.

Blackfish Wild Salmon Grill
Blackfish Wild Salmon Grill is the Resort’s innovative Pacific Northwest seafood restaurant, influenced by traditional tribal culture and cuisine, served in a casual setting.

This year, Chef David Buchanan will be serving fresh Sous Vide Sockeye Salmon 110° with a spring pea jus with jardiniere vegetables and lightly curried cous cous for $31. Cedars Cafe
Cedars Cafe offers a relaxed atmosphere for breakfast, lunch or dinner and is open seven days a week, 24 hours a day.

This Easter Sunday, Chef Brent Clarkson is serving up broiled to perfection lamb chops rubbed with olive oil, seasoned with garlic and a fresh herb marinade; served with a Riesling wine demi-glace, orange mint sauce, garlic mashed potatoes, charred asparagus, and crispy onion straws. Eagles Buffet
Eagles Buffet is offering a mouth-watering selection for Easter Sunday Brunch and Dinner. Many of the items will be served all day during both meal services.

The menu* will feature a selection of brunch items, such as Made to Order Waffles, Steak and Eggs with chopped onion rings and pepper jack cheese, Prime Rib Hash, French Toast Casserole with bananas and rum sauce, and BBQ Braised Pork Belly.

Still Craving Chocolate: Check out Tulalip Resort's Offerings for Chocoholics


Just north of Seattle, Tulalip Resort Casino chefs are going crazy for cacao in their kitchens from through March 31st. During a recent trip to Seattle, Executive Chef Perry Mascitti discovered Seattle’s indi chocolate location at Pike Place Market, which is a true small batch, single origin roasted “bean-to-bar” operation.

After his visit, Mascitti brought back samples for his chefs to taste and he challenged them to understand the nuances and complexities of the cacao bean. He went on to ask them to create a dish presentation that would best match those unique and wonderful characteristics. The excitement was so high that some of the chefs decided to not only use indi’s cacao beans in their roasted nib form, but to also find a place in their recipes for indi’s cacao tea blends, numerous spice rubs and un-tempered chocolates, as well as their 72% chocolate bars.

Chocolate lovers eager to try new dining options: this line-up is for you.

Chef Brent Clarkson’s Cedars Cafe’s featured dish is a Chicken Mole Torta with tender chicken breast simmered in Chef Brent's house-made mole sauce prepared with indi chocolate’s cacao nibs and mole spice rub; topped with coleslaw, chef’s tomatillo salsa, and pickled jalapeño. Served on a grilled torta bun and topped with his house-made black refried beans. To end the meal on a sweet note, guests can enjoy a Warm Chocolate Cobbler with pecans and indi cacao nib streusel.

Chef David Buchanan’s Blackfish Wild Salmon Grill and Bar will feature indi chocolate Dusted Filet Mignon - an 8 ounce filet with chocolate demi-glace, potato torte, broccolini, and spaghetti squash. Dessert consists of indi cacao nib churros with a Peruvian chocolate dipping sauce.

Chef Jeremy Taisey’s Tulalip Bay Restaurant will feature Cacao-Citrus Tea Smoked Duck Breast served with a chocolate ravioli, foie gras cake, black truffle, and dark chocolate. And that’s not even dessert! Enjoy indi cacao infused Amaretto Zabaglione with fresh raspberries, indi chocolate sorbet and cacao nib tuile post-meal.

Chef John Jadamec’s Eagles Buffet featured dish will include Pork Ribs seasoned with indi chocolate barbecue spice rub and bitter sweet chocolate; served with a house-made BBQ sauce.

At Journeys East go right for the finale by trying Pastry Chef Nikol Nakamura’s Warm Chocolate Fondant Cake with indi chocolate Gochujang chocolate sauce and ginger whipped cream.

Chef Brent Clarkson wants guests to order up a game day sandwich at The Draft Sports Bar and Grill, featuring a Spiced Cacao Rubbed Flank Steak Sandwich rubbed with their special blend of spices and indi chocolate cacao nibs, grilled and served warm on a buttery toasted ciabatta roll; topped with spiced cilantro sour cream slaw and fresh pico de gallo. A Rockin’ Valentine’s Day at Tulalip Resort North of Seattle
